The Pastry Brush is a certified and registered home bakery in Chardon, Ohio owned by Jennifer Brush. From the first time that my grandmother made Greek bread with me, I have wanted to be a baker. I like to make desserts and breads that take you back to that special time in your grandmother's kitchen when everything was made by hand with love (and a lot of fresh butter).
I have taken classes from well known chefs and bakers from across the country. Recently, I consulted as a recipe tester for Baking Artisan Pastries & Breads by Chef Ciril Hitz. I enjoy teaching classes in my home to both children and adults. Please look for me at the Western Reserve School of Cooking in Hudson, Ohio where I will be teaching a series this fall about Gluten-free baking.
I am an avid gardener who likes to play with edible flowers in her baked goods. My recent article, Baking with Edible Flowers, appeared in Dessert Professional Magazine in March 2010. Look for my other articles such as, Gluten Free Baking, also in Dessert Professional.
I completed the Professional Pastry Program at Western Reserve School of Cooking. I am a member of the Cleveland Chapter of Les Dames d'Escoffier International and the Society of Wine Educators. I hold both an Advanced and Intermediate Certification in Wine from the Wine and Spirits Education Trust in England. I am currently studying for the Certified Wine Specialist exam.
In addition to baking, I have worked as a speech-language pathologist in the field of aging for the past two decades. As a geronotolgical researcher, my findings have been published in the US, Great Britain, Canada, and Japan. Much of my research and consulting has focused on helping long term care communities improve the quality of their dining programs in order to improve quality of care. Look for the new book I co-authored coming out this fall called Communication Toolkit: Environmental Interventions for Dementia.
