All breads begin with flour, salt, yeast and water or milk and sometimes butter. Then with time, effort, and creativity, a crusty loaf, or a buttery roll emerges. Most of our breads utilize pre-ferments-a small amount of dough that is made ahead of time before the main dough is combined. Pre-ferments are made and left to rise between 12 and 18 hours before mixing the final dough for your bread. This process enhances the breads flavor. The final dough is then fermented slowly and hand shaped which produces breads with a full flavor and airy texture.
